Ingredients:
1.5 cups (375ml) flour
4 cups (140g) Corn Flakes, lightly crushed
1 tbsp (15ml) PnP peri-peri meal seasoning
500g fresh Hake Fillets, sliced
2 large eggs, lightly beaten
Salt and milled pepper, tarter sauce, lemon wedges
Method:
Pre heat oven to 200C
Place flour in a bowl and season with salt and pepper
Mix corn flakes with peri-peri seasoning in a seperate bowl
Dip fish strips into seasoned flour, toss to coat and pat off excess flour. Dip each strip into beaten egg, then toss in seasoned Corn Flake crumbs
Place crumbed fish strips in a single layer onto a greased baking tray. Bake for 15-20 minutes or until crispy
Serve with tartare sauce and lemon wedges
