Thai Coleslaw
Serves 3-4
2 cups red cabbage, grated
2 cups green cabbage, grated
2 cups thinly grated courgette (approx 3 courgettes)
1˝ cup grated carrots (approx 2-3 carrots)
˝ onion chopped
2 spring onions, finely sliced
1 cup loosely packed coriander, then chopped
1/3 cup cashew nuts
1 tablespoon black sesame seeds
Thai Sauce
1 red pepper
1 cup olive oil
1 teaspoon chilli flakes or cayenne pepper
2 tablespoons lemon juice
2 tablespoons apple cider vinegar
3 tablespoons tamari
1˝ tablespoon honey
3 cloves garlic
2 cm piece ginger. Peeled
1 teaspoon curry powder
1 tablespoon coriander
˝ teaspoon Himalayan rock salt
Grate the cabbages, carrots and courgettes together, chop the onions and combine in a salad bowl with the spring onion, coriander and cashews. Make a batch of the Thai Sauce and pour over the salad and mix well. Sprinkle the black sesame seeds on the top with a few extra cashew nuts.
